Legend has it that more than 5,000 years ago, along the coast of what is now Weifang, Shandong Province, there lived a prehistoric tribe called Su Sha, whose leader was known as Su Sha Shi. While boiling fish in an earthenware pot, a wild boar suddenly ran past. Su Sha Shi gave chase, and upon returning with his catch, he found the seawater in the pot had boiled away, leaving behind a layer of fine white powder at the bottom. This salty and savory powder, which enhanced the flavor of the boar meat, was salt left after the seawater had evaporated. The Warring States period historical text "Shi Ben" records this story of Su Sha Shi boiling seawater to obtain salt.
This process of heating seawater to evaporate the water and obtain crystalline salt, a solid-liquid separation process, is called evaporation crystallization. This technology is widely used in seawater desalination, chemical wastewater treatment, pharmaceuticals, and light industry.
